I just cook chopped garlic and onion in small amount of oil and then add a load of skinned toms, seasoning and herbs and just let it cook down. The freezer is full of small packs of the pasta sauce to keep us going until next year.

I don't use basil I use rosemary ,an italian student gave us the recipe.sweat onions loads of garlic in a good glug of olive oil  ,add chopped peeled (sometimes deseeded)tomatoes and a big sprig of rosemary though you could use a handful of basil.I simmer it uncovered till thick adding seasoning and a pinch of sugar.I sometimes grate courgettes into the mix- you've got to get rid of them somewhere ;)
