I really should eat breakfast before coming on-line.  ;D Pakora is one of my favourites, so if there is a recipe floating around I'd love to see it. :)

Here you go ......

2 or 3 Medium Potatoes (diced small)
1 Aubergine (diced small)
Handful of fresh Spinach
1 Large Onion (diced)
1 tbsp of dried Fenugreek Leaves (Kasuri Methi)
Handful of fresh Coriander
4 Green Chillies (cut finely)
1 tsp Red Chilli Powder
1 and half tsp Cumin Seeds (slightly crush with rolling pin)
1 and half tsp Coriander Seeds (slightly crush with rolling pin)
1 and half tsp Salt
200g Gram Flour
1 tbps of Plain Yoghurt

Oil for frying



Mix all ingredients (apart from the flour) together in large bowl, putting the yoghurt in last. Leave to rest for 20mins

Gradually add the flour , mix well until batter is smooth.  (it should be quite thick)

Heat oil, gently drop tablespoonfuls of the mixture into the hot oil and turn frequently so they brown evenly. When ready, remove and place on kitchen paper to drain.

Make sure you cut the veg quite small so they cook quickly.
When adding the flour to make the batter there should already be enough liquid which has came out of the veg after it they rested for the 20mins but if you feel you do need to, add a tiny bit more yoghurt.

Enjoy - they are delish !
