I am a great fan of tagines and am about to buy myself a couple, one ceramic and one cast iron (if I can make my mind up which as there are so many beautiful ones around) but my question is - does anyone have any experience of using them on a BBQ (actually a large chimonea) or can you think of any reason why they couldn't be used in this way - thanks :)
I've just bought one but can't say I know what to do with it. Got it from T 2 Max £5.99. Any recipes please Calendula.
got loads of rx - here's a classic but if you want lamb, veg or chicken recipes give me a shout and here's few more
http://www.momo-interiors.com/taginerecipes.html
beef tagine with sweet potatoes, peas, ginger and ras-el-hanout (spice mix mainly of cinnamon, cloves, ginger +)
2 table spoons olive oil
40g fresh ginger finely chopped
1 onion finely chopped
1 kilo beef cut into bite size
1-2 teaspoons ras-el-hanout
2 medium sweep potatoes, peeled and chopped
salt and pepper
2-3 tomatoes chopped
500g shelled peas
1 preserved lemon finely chopped
small bunch of coriander
heat the oil in the tagine and stir in the ginger and onion and cook until soft. Toss in the beef and sear all over then stir in the ras-el-hanout. Pour in just enough water to cover all this, bring to the boil, reduce heat to a simmer, cover with the lid and cook gently for approx. 40 mins. Add the sweet potato, season with salt and pepper, cover again and cook for a further 20 mins or until meat is tender. To serve sprinkle with the preserved lemon and coriander - serve with couscous or chunks of bread and maybe some plain yogurt.
Doesn't have to be cooked in a tagine - can use a casserole or similar.
Enjoy - Perfect for the coming autumn nights :)
