Title: Hot Tomato Salsa

As the tomato season draws to a close, this might be appreciated by those surrounded by toms!

Hot Tomato Salsa


3 kg tomatoes
5-8 dried red chilies (or fresh ones if available)
15 cloves garlic
3 cups diced onion (red if available)
5 sweet peppers diced
1 tab salt
1 tab sugar
3/4 cup red wine vinegar

(If using dried chilli) Place chillies in a bowl and cover with boiling water. Allow them to steep for about 30 minutes. NOTE always wear gloves when handling chilli or plastic bags over your hands!

Meanwhile, peel, seed and dice the tomatoes.
Peel and mince the garlic.

Now, drain half the water from the chilli and either blend the chilli and remaining water or crush it to a pulp with a pestle and mortar. If using fresh chilli, either crush it to a pulp or hash it with a knife until just a pulp.

Put all ingredients in a saucepan and bring to the boil. Simmer until thickened.
Pot in boiled jars when piping hot, and reboil jars at least 15 minutes. This makes about 3 litres of salsa.

You can add some coriander to this if you like the taste of it.

Looks like a good recipe. :) I'm not very good at "cups" though. How much would that be in millilitres/grams?

Well, it just means chop the onions and fill up cups until you get the right quantity. It's a 250ml cup, I guess it's about 6 good sized onions in all.

Mmmm, sounds good to me. I guess its Tomato salsa making tomorrow  ;D although I may have to freeze some as I have a serious shortage of jars.
