I wonder if anyone can answer my query please.
One of the other plot-holders has given me a bagful of Damsons, we will probably stew some and hopefully also make some jam, if we have time.
What I'm not sure of is, can Damsons be frozen as they are or do they have to be cooked ?
I was thinking that if they could be frozen as they are, then there is no rush to have to actually do anything with them all at once.
I think probably you should remove the stones before freezing. I certainly do with plums.
With smaller damsons you can remove the stone with an olive pitter.
Thanks for your replies, so if I remove the stones, I can then freeze them without cooking them and just take them out as and when I want to use them.
Great!
I Googled and found this. qahtan
We clean them up, leaving the stones in and then freeze them on a tray first, before bagging them off - they tend not to stick together so much so if you need to take smaller quantities it is easier. Frozen still makes great jam....
Thank you for that, I was dreading the thought of trying to get the stones out first ;D
That is what I'll do then.
Thank you all for your replies.

Jill

I've always frozen them on a tray first as well, then popped them into a freezer bag so I can take a handful as and when I want them. Always worked fine - I'm very jealous, I've got no damsons this year and I LOVE them!!
xx
My tree had 5 on it...not supposed to fruit until next year! so we divided them up carefully between the 3 damson lovers! ;D
I was only expecting 3 they really know how to hide themselves i only spotted the other two when they changed colour.
Just to make you jealous, we have picked over 50 kilos of Damsons this year and the trees are still full of them Sadly now they are beginning to go soft and wrinkled (just like me!). Last year we had 10 , that is 10 fruits not 10 kilos.
GRRRRRRRRR! >:(
Well - that's got Eric thinking of his life-saving Gin?
NONE here!
I find they are best preserved by steeping them in gin for 12 months (hic!)
