I harvested my last broad beans this week and most of them are OK but the skins are very tough even after prolonged boiling.
Anyone any ideas what to do with them?
Take the skins off after cooking. (Not such a chore as it sounds, and the insides are delicious.) They do get tough at this end of the year - you're lucky still to be harvesting them.
You can peel the skins off and I've found them ok to eat like that. Or you can peel the skins off then add them to stews etc, so you could freeze some?

You can peel them before they are cooked, an easy job.

Treat old beans as a pulse-cook,remove skins and blend the beans to make a coarse puree-flavour as you wish-think Indian??

A lottie neighbour of ours raves about old broad beans made into a homous type thing usig the same ingredients, but replacing the chick peas with the mashed broadies (skins removed).
