Does anyone have a recipe for that "shop-bought" cornichon/gherkin vinegar .... the one you see with a few bits of onionh, some mustard seeds and dill in it please?.... I've got a grand pickling session comiong up this weekend and my family are hoping that I won't turn all the gherkins into nuclear picallilli but will make something they find edible out of some of them :D.... I've got one jar made where I made the vinegar up by using a flat teaspoon of sugar in 1/3 cup of sugar whihc was then poured over the gherkins, about twice that of distilled vinegar and a heaped teaspoon each of mustard seeds and dill..... looks about right in the jar I guess.....

Hiya, chrisc..the only vinegar with onions in I can find is in my oded schwartz book
1 litre white wine or cider vinegar, 2 sprigs tarragon, 2 sprigs thyme, 2 fresh or dries red chillies(optional), 2 garlic cloves, 2 tsp blck peppercorns, 1 lb chopped shallots
makes 2x500ml bottles, heat the vinegar, add the herbs etc then put in your bottles
I suppose it could be used to pickle gherkins, says it is ok for 2 to 3 years ;D

Hmm... doesn't really sound like the thing, though it sounds like a great recipe for shallots though.... I think I'll have a plough through the web looking for something there.... it's a sort of sweetened weak vinegar with mustard and dill...it can't be that hard....

The vinegar in my red onion pickle I posted today. seems like what you are looking for. it tastes similar to the vinegar that is in the sweet gherkins over here. nice!!!!!! qahtan
