hi. can anyone recomend a good reciepe for carrot cake please preferably a low fat one or i supose i could just tell the missus its low fat lol

This is the best recipe I have found for carrot cake. Made it a couple of weeks ago for MIL Birthday and put Ginger and Lemon icing on top, was absolutely delicious. :P
