Title: Summer squash recipe's
Post by: pjb on August 25, 2009, 08:52:25
I've grown some summer squash (yellow bush I think) they're round-ish with a slight scalloped edge and bright yellow. Anyway how do I prepare/cook them? do they need peeling like winter squash? Any ideas? Thanks.

This is my squash called *Sunburst* does yours look like this? I thought mine was going to look more flattened but this is how its growing.
If yours is the same then there is no need to peel it. Treat like your standard courgettes. Slice and fry or chop and roast. The larger ones I will bake for about 30 mins and then stuff with a savoury filling and return to the oven for another 30 mins!:)
