Title: freezing aubergines

does anyone know if aubergines can be safely frozen please ??? ???

They can.

I've always found frozen aubergines a little mushy when defrosted, I'd imagine smaller, denser, varieties would hold up best... I'm sure someone will be along with some practical advice shortly. :) (Lucky you, if you've got a glut, my plants are refusing to flower.  ::) )

You've said it.The long ones are best. We just sauté them lightly.

thank you both for your help,not exactly a glut but each plant had 4 fruits,not bad for a lidles plant. :)

Fingers crossed we are on for a glut... best year ever.. had to cut out a botrys'd stem yesterday...  :)
