Title: Courgette pasta sauce for Duke Ellington

1 kg/2lb Courgettes sliced thinly
Oil to fry plain olive is good, don`t use EVOO!
clove of garlic crushed
3-4 tbspn single cream
50gm/2oz cheese, parmesan if flush but goats is really nice
S&P to taste.

Gently fry the sliced courgette in the oil, if your pan isn`t big enough and it is piled high then use oil between the layers and turn often, don`t let them brown too much.

When they start to get a little soft start to break them up with a wooden spoon. Then add the cream and the cheese, mix well and then add to the pasta, spirals seem to be the best as it is slightly chunky and gets caught in the spirals.

It freezes well too so get your `gettes used up  ;)

Thanks so much for posting your recipe. It sounds really nice and great for a quick meal.

Forgot to say that the above makes enough for 6 portions and takes about 20 minutes.
