I cried for over an hour .......Whilst peeling over 120 shallots for pickling tomorrow. :'( :'( Definitely make your eyes water. They are now soaking in salted water. My first year doing pickled onions. I bought some Paris Silverskin seeds for small pickled onions but will stick to shallots as they are small enough to peel in large quantities as it is.

I only have to look at a pickling onion and my eyes water. Late husband could sit for hours doing the necessary. Needless to say since he is no longer around the family don't get their jars of onions :)
Protective glasses, peel under water. Put the onions in the frig. for a couple of hours. These are all suggestions I have heard work. I am lucky in that my eyes do not water.
last year when i was peeling and chopping my home grown onions for some chutney making, the strong smell and the watering of the eyes made feel so nauseous (http://i280.photobucket.com/albums/kk187/thifasmom/smilies/vomit.gif) my mom had to take over.
Years ago when I wore hard contact lenses I could peel onions for hours, used to do them for all the PTA, scout, church functions. I've never been so popular.
i do mine under water, (the onions not me lol) the worse thing was i couldnt get the smell of the onions off my hands for days :'(
