Title: plum jam

Could I put plums in with a small quantity of water, cook down and then push them through a large sieve to get the stones out?

You could, but you may find you get "meat" in your jam  ;D

I find it preferable to cut plums in half and lift the stone out, and then at the same time you can check in case there are any maggots inside.

Agrees 100% with Jenny. My plums are ready and its time to make jam! I always cut them open to remove the stones ...its a bit fiddly but would rather see whats inside ;)

Thanks for the advice ladies  ;D

I stoned them all and have frozen them to make Jam next week.

I was just being lazy as they were all so small and fiddly!  ;)

My greengage jam recipe says to halve the gages but ot remove the stones, when the jam is at a rolling boil the stones will bubble to the surface, you then fish them out - I don't know if boiling with the stones does anything to the flavour but it was easy enough to catch them!

the livestock floats to the top with the stones and scum... most of the time..  ::)

The jam sets better if you leave the stones in and fish them out as the flesh softens, in my experience.
