Title: rissotto

Can anyone tell me if I can do anything with leftover rissotto?
Today as usual I made too much I threw the remainder away as I know cooked rice can be dodgy,but it was really scrummy and such a waste help ???

hubby says it is quite safe to reheat rice once providing it has been cooled and stored properly, not good to freeze rissotto though hope this helps

Make a soup of whatever flavour rissotto you have then add it to thicken.
Mushroom rissotto = Mushroom or veg soup.  ;D

Not tried this as we never have left over risotto ;) but Nigella has a recipe for 'Golden Balls'

You just take the left over risotto, shape into balls or croquette type shapes, roll in seasoned flour then dip in beaten egg and then a mixture of breadcrumbs and parmesan cheese, deep fry and enjoy. [I never said it was healthy!] :)

Can't bear seafood but the recipe would be easy to adapt sounds yum,thanks for that :)
