I have used half a packet of filo, defrosted from the freezer and was wondering if I could re-freeze the unused half. I've wrapped it in a placcy bag. Or would I be better putting it in the fridge and trying to use it tomorrow

If, like me, you have a glut of corgettes roast some off in the oven with some garlic and anything you have from the plot like beetroot and shallots. roll the pastry into a square and pop the roast veg on top leaving a 2cm edge.put some feta on too. cook for a bit. yummy. what a treat.
1066, according to Prue Leith pastry is one of the few things that can be frozen and defrosted and frozen again. Never tried it, but it's worth a try. ;D

I was determined to use some of it up and found 2 nectarines and sliced those, put them in a small oven dish, sprinkled with brown sugar and a slug or Drambuie (?!) and then covered them with layers of the filo - baked for 20/30 mins. Still have a slice left over so that's going to be brekkie :-X
Sarah, your idea sounds lovely, the problem was all the allotment veg had already been spoken for, but I'll give that version a try as it sounds very simple and delicious
Valmarg - I still have some sheets left over (couldn't quite bring myself to throw them away) in the fridge so I'll give Prue's idea a go and see what happens

Someone on our site said that she just puts a chunk of rhubarb with brown folded into a puffpastry mini turnover. Have yet to try it

BTW my cold nectarine pie this morning was delicious, probably better cold than hot. Next time I'll have to try and wait for it to cool down

Well I forgot I'd put the filo pastry in a bag in the fridge ! Until last night when I remembered and made another fruit pie. And the pastry was fine to use.

I would be prepared to risk refreezing filo pastry because it has to be cooked and this should kill the dangerous bacteria. I would do it immediately though.
I have also noticed on what I thought was fresh fish, bearing a notice 'suitable for freezing' a note saying. This product has been previously frozen but was defrosted under controlled conditions so can be refrozen immediately after purchase.
Have to admit I was more than a little surprised at that.
