I read in one of the papers about a new cookbook that uses vegetables in puddings and cakes to reduce calories. The article talked about a chocolate cake and another cake made with squash and said they were really good.
I forgot to take the name of the book but it had velvet in the name!
Any ideas of the name, or better still some of the recipes from it?

There was an interview on BBC 1 Breakfast with the lady who wrote it a couple of weeks ago. They looked delicious.
I can't remember who makes it but there is a prune purree' that can be used to replace fat in cakes. I used it in fruit cakes & it worked fine.
I make a cake every week when I give English classes to local scientists. One is diabetic so I use a lot of fruit and vegetable recipes to improve the GI factor and another has high cholesterol despite being as thin as a rake so I have taken to replacing butter with equal amounts of grape seed oil. The results are very good and the cakes seem more moist.
The BBC food site or google will give you any amount of cake recipes especially carrot, courgette, pumpkin... Look out also for chocolate beetroot cake. That's delish. You could also order the book from the local library.
I've had a look on amazon & one of the reviewers said it's good if you are wheat free. I am totally gluten free so I will have a look in at it I think.
Thanks all - very helpful - I think I will look out for it in a bookshop and see if its worth asking for as a birthday present. I will google cakes as suggested though. I didnt like the chocolate beetroot cake - which is a shame. I do like making unusual things for my friends and not telling them whats in it till they've eaten it!
