Title: preserving ratatouille

I have courgettes, turnips, beetroot, carrots to use and can 'throw' some onions in... I am thinking of making a sort of ratatouille... 

what would be the best way to preserve some of this - freeze or bottle?

I always freeze my ratatouille and its fine for months i use it in stews and pasta sauces and on its own as a vegetable side dish.

Strange mix??

Freezing anything, I like flat packs for quick defrost.
