Title: Borscht

Has anyone got a good recipe for Borscht? Did a search but couldn't find anything.  I made it a few times years ago but can't remember how and i have lots of lovely beetroot.

Thanks Flighty sounds lovely, I haven't got the carraway seeds, might use mustard seeds instead.

If you havent got caraway seeds try a splash of pernod  ;)

I found a couple of recipes in eastern European cookbooks - one involves fermenting the beetroot first, the other also uses fermented beetroot juice and raw beetroot (fried in butter with other veg for a few minutes...)

The first Borscht I made was with chioggia - soup looked disgusting!! Make it with red beetroot!!

Fermented beetroot - raw sliced beetroot, boiled water, allspice, peppercorns, garlic cloves topped with a slice of wholegrain bread and left for 3 days!
