how do you know when sweetcorn is ready to harvest ?

WHEN ALL THE EARS ON THE COB GO BROWN (THE HAIRS) THEN YOU MUST GENTLY PEEL THEM A LITTLE ENOUGH TO GET YOUR THUMB IN AND BU USING YOUR THUMBNAIL PRESS GENTLY IF SQUISHES THEN LOOK GOOD TO ME JUST TRY AND LEAVE ON THE PLANT TILL ALL THE KERNALS HAVE GROWN ALL THE WAY UP THE COB

soz i though i was talking about corn on the cob didnt look props never grown baby corn before ignore me im doing a blond day

You need to harvest them before they are pollinated. As soon as the tassles appear. I think I read somewhere that you can take off the male flower spike to stop pollination.
