My first garlic has white rot. If I find the rest is infected, is there anything I can make with it before it rots completely rather than bin it all?
pesto. garlic butter, make a log and cut into discs then freeze
chop it up add olive oil then use it as you go

Just bag the cloves as is for the freezer.
I made up a big batch of tomato/garlic pasata with my ridiculously small garlic last year. It was useless for much else but made a decent sauce.
Bake the whole heads and spread the soft inners on crusty bread, whatever is left freeze .....sooo tasty !
If you have loads I'd freeze it as well, still have some bits from last year in the freezer :)
