Is it too soon to trim back my daffs - they are starting to die back anyway.

I plan on cutting mine back within the next week to ten days.

You mention they are starting to die back already, I presume you mean the tips are yellowing.

This is the sign I look for i.e. the leaf has done its work when this happens. If this is what you mean by dying back then go for it.

Alternatively I work on about six weeks after flowering!.

Yes, in fact some of them are quite brown.
I guess mine were probably in front of yours as I am down on the South Coast.
