Title: Cheese making

Has anyone seen one of those cheese straining cloths in the shops and if so where?   Having watched Indian Food Made Easy (and made the chicken kebabs successfully) - I thought I might have a go at the cheese.

Has anyone any experience in, or recipes for cheese making?

Ive use Ascott sometimes although there are a few sites selling cheese cloth if that's what you are looking for. Not sure about the shops never looked.

I've made a few different cheeses. I found soft cheese easy to make, hard cheeses are a little more fiddly and time consuming and having to wait while they mature!

I've always fancied trying to make paneer, but as I have an allergy to lactose its not really on the cards (but as I say have always been tempted...). I've had fresh paneer in the past and it is sooo delicious, completely and totally different from shop bought/mass produced paneers, its soft and crumbly and takes flavours really well.

For the lactose intolerant the lactose is in the whey so making a hard cheese eliminates a high proportion of the substance.

There is an enzime which is added to milk to predigest lactose and the product is available under the trade name of lactolite. I have no idea if it can be used in cheese making though.
