Title: Elderberry Jams

Three different variations to try! I will be making the third today as I dont have enough berries to make a "pure" jam!

Elderberry Jam
1 lb Elderberries
Juice 1 lemon
1 lb sugar

Crush elderberries in pan
Simmer until soft
Add sugar and stir until dissolved
Add lemon juice
Boil rapidly until set

Or

Elderberry Jelly
4 lb elderberries
sugar
1 pint water
1-2 lemons

Simmer berries in water
when soft strain through jelly bag
to each pint of juice add 12oz to 1 lb sugar and the juice of 1 large or 2 small lemons
stie well until sugar has dissolved
Boil rapidly until setting point is reached

or

Elderberry and apple jelly


2 lb elderberries
1 lb cooking apples (unpeeled)
1 pint water
sugar
juice 1 lemon

Cut up apples, do not peel or core
Simmer in water for about 10 mins till soft
add elderberries and continue cooking until quite soft
Strain through a jelly bag
To each pint of juice add 1llb sugar and juice of 1 lemon
Stir well until suagr has dissolved
Boild rapidly until set

Also have recipes for Blackberry and elderberry jam, Elderberry and apple jam, Elderberry chutney,Elderberry jelly, Elderberry syrup, elderberry vinegar if anyone is interested!  Dottie P

Dear DP,

I am interested in any elderberry recipes you may have, as I have located about 6 bushes now and will be plundering all the berries I can reach!!

P.S. Would also be interested in making wine but do not have any kit, so would need lots of advice.

Debs, let me know which ones you want and I shall copy them up! Winemaking is fun, but you do need a few basics, you can often get demijons and stuff from charity shops, and in the for sale bit of local papers. Often if you mention it to people they have winemaking stuff sitting in their lofts that they would love to get rid of! (As happened to us yesterday!)

Children and I went elderberry picking - and picked about 6 lb !!

Have now made:-

Elderberry Jelly,
Elderberry cordial ( reputedly good to stave off winter colds) and Elderberry & Apple jam  ;D

.....thank goodness I'd saved some jam jars ;)

P.S. Have also frozen some berries for later use.
