Title: FISH RECIPES

I have been sorting out  food in my freezer and have found various types of frozen fish. I found salmon, hallibut and some smoked haddock pieces. Does anyone have a favourite recipe using fish that I could try? Some of the fillets are nearing their *best by date* so would like to use it up quickly.

Salmon - Salmon Mousse

Haddock - Jamie's Fish Pie or a Curried Custard.

Halibut - with great respect!

Halibut - just sauté the fillets for about 2 mins on each side (in butter with a little oil)

Salmon - bake at about 180 for 10 mins in a foil parcel for 10 mins with you fave herbs/spices
or a spice blend and a little butter, (thai salmon, in a pan mix 2 tbsp oil, lemon grass, red chillie
1 inch of ginger, 1oz creamed coconut& 1 lime, cook for 5 mins bung over the salmon in foil parcel cook as above)

Wrap the halibut in very thin parma ham then proceed as above.

Does anyone have a good fish cake recipe? I have tried two different recipes and was dissapointed with them.

In the end, recipes are not as important as your own taste. Except for instant quantanties.

Think what you like &, if you have it, put it in. There's nothing clever to any of these offered ideas. If you haven't got it, is it THAT important or what else will do?

I do not think that you can beat fish simply cooked. Either in batter, so that it is steamed.

In the microwave for a couple of minutes.

Pan fried with butter serve with a dash of lemon juice and some chopped parsley over it.

If ever I can get hold of a  load of mixed trimmings I make it into a fish pie.

For non cooks the easiest fish pie recipe is to make up some parsley or cheese sauce (from a packet if need be) add the chopped fish whilst the sauce is still hot, it cooks it. Put into the same dish you use for cottage pie and add mash. Instant will work. Then cover with grated cheese and a sprinkle of paprika and bake at 170/180 degrees (depends on the oven) for 20-30 minutes until the top is brown and bubbly.

I find fish cakes rather tasteless and think they are a waste of good fish but one old recipe which some chip shops used to sell is to thinly slice a large  potato. Put a bit of fish in between two slices of potato (like a sandwich) dip into batter and deep fry.

Another recipe for stronger flavoured fish is a fish no bake cheese cake.

Make the base as you would for a sweet cheese cake but use savoury biscuits. Then whip up a small pot of double cream and a tub of cream cheese, stir in the cooked flaked fish (smoked salmon works best) with black pepper and Sainsburys sell a pack of smoke salmon trimmings for 88p.

Great with a salad
