I still have a few parsnips in the ground which were from last year. When should I stop harvesting them, and just dig them all out to go onto the compost heap.
They look fine, but I'd assume they'll probably be past it soon?

They Generally Go to seed send up a flower spike And parsnip gos soft in center ,Up to you really ;) ;)
Whip em out chop em up, par boil and freeze them, I still have loads in the freezer. ;D ;D ;D
The old boy on the plot next to me, digs all his up and buries them again upside down. Stops them regrowing and apparently they keep for ages.
Never tried it myself but I may do this year.
make parsnip wine with them -- It`s delicious !!!
Roast them in olive oil with some cinnamon, then whack them in the freezer. Or, there's an amazing Delia recipe where you roll them in parmesan breadcrumbs after roasting. A friend cooked this for me and they melted in the mouth. And you can freeze this recipe as well....
