See what a girl can do during one afternoon waiting for the BT engineer to arrive!  ;D

And, if you have a juice extractor, loads of that in the freezer?  (Don't forget the lemon juice).= Tim

Wow EJ! :o You got a big freezer??!! I could do with you on the 24th as I am hosting a coffee morning with proceeds going to the Macmillan cancer charity, and I need lots of cakes to sell! Well done you! :D
Don't forget to make apple and rosemary jelly, great on lamb! And apple wine is superb ;D
(ahhh Tim, if she was in the WI she would be unable to sell to those in hospitals!)

Well with so many apples around, I cannot stand to see them being wasted, and to just freeze them as pulp seems a waste.  All the cakes/pies freeze well and it is very handy to have sweets in the freezer!

Used some more apples today making Bramble, Damson and apple jam and apple and rosehip jelly.  Still I have a carrier bag full, 2 trees weighed down at the plot, Roy offering me his and my lovely lottie neighbour giving me her windfalls.  This isn't a complaint by the way!  Just having to really work my imagination now!

DP, recipe for the apple and rosemary jelly please.  I only have a teeny tiny rosemary bush in the garden, but if I need lots I bet I can track some more down.  And I am after an apple and mint jelly recipe please.

Apple and mint jelly
3lb tart apples 11/2pints water
1lb sugar to every pint of jiuce
cut apples into pieces and simmer in water until soft
put pulp into jelly bag to drip overnight
measure juiceand add sugar
heat until sugar is dissolved,add a couple of pieces of lemon rindand a bunch of mint
boil until well flavoured.test for setting.
remove lemon rind and mint and put in small jars.
it suggests you add a little green colour.
Have made apple jelly but haven't tried it with mint,

This is not fair >:(  Four months I've been dieting.  I could just about cope with the recipes, but not the photographs!  EJ and DP (damson cake), shame on you both for leading me astray.   ;)  :D

EJ.......Rosemary jelly (make lots as it soon dissapears!)
4lb Cooking apples
3 Pints cold water
1 1/2 lb sugar
8 Large sprigs Rosemary, plus a few more for decoration

Cut up apples,discard any bruised bits. Put in a pan with the water and rosemary, and bring to a boil and simmer until very soft.
Mash with a wooden spoon and strain through a jelly bag.
Put in a pan, add sugar and heat gently until dissolved, then boil rapidly until it has reached setting point.(stirring occasionally)
Remove any scum and pour into hot sterilized jars, add a sprig of rosemary to each pot and seal as per usual.
Makes approx 3 1/2 lbs

Other variations on this theme are (do not add rosemary)
Sage jelly........add 4 tablespoons chopped fresh sage after removing from heat
Thyme Jelly.....Add 8 large thyme sprigs with the water, and a further sprig in each jar
Mint Jelly.add a small bunch of mint to teh water and a further 6-8 tablespoons chopped mint after removing from heat

In fact the herbal possibilities are endless!!

Simhop,best served on a Sunday with a big fresh leg of lamb, and crunchy roast potatoes! (also nice spread over the lamb before cooking too!)
I often throw jellies into gravy to give it a sweeter flavour. Never tried it on toast, but I am sure if you love the taste of the herbs, it would work!  DP

The only thing I haven't done with them yet Tim is grate them into my bath water!  :o  However, down to the last carrier bag of windfalls.  Couple of crate loads of good ones to store in the shed.  I didn't think it was a good year for apples on my tree as at first glance, there didn't seem to be all that many, however, now I have them all picked, turns out it was a splendid year for my apples!
