Title: Keep them sharp.

So much non-stick ware around that many utensils used are plastic. But plastic gets blunt very quickly.

So - how often do you sharpen them? No wonder you can't slip them under a fried egg!!

And - old hat I know, but worth reprise - how often your table knives? If you can see their cutting edge, you might as well use a spoon. Certainly NOT buy 'Steak Knives' - which you don't sharpen either!!

You are putting them in hot fat and softening the edges, that is what does it!

Wooden spatulas, hard to find but they do not melt.

Nice point. But - even wooden ones get blunt? Certainly I sand them fairly often.
