Had left-over egg whites - thought Soufflé Omelette - in the middle, long phone call - forgot the left-overs & half-hitched the rest. Oh, well - there's always tomorrow!!

Just another little lesson learned - or, rather, a salutory reminder!
Cream for party Salmon Mousse took for ever to whip - even with electric machine - can't think why I used it for a cup of Cream!! I think a hand beater is more efficient.
And suddenly it was near Butter - very difficult to incorporate into a Mousse!!
I note that Delia advises adding a TBS or so of milk to minimise the risk.
Despite the rather unattractive appearance of the result, & its texture more like a Paté, it all disappeared.
looks lovely but i have the same problem if I whip cream with my kitchenaid I now stand over and watch it!! ;D
