Title: What happened to all the white eggs?

I was watching an American cookery show on tv today the the cook was using white eggs. I haven't seen white eggs since I was a child. Where are they?

I think Americans prefere only white eggs.   They think we are odd liking brown eggs.

we used to pay more for brown eggs, people believed they were more nourishing and healthy than white ones.  So white eggs lost in the popularity stakes and we are lumbered with brown ones.  It's good to get out of the country and see white eggs and brown eggs treated equally.  ::) ::) ::) ::) ::) ::)

Were you watching the Barefoot Contessa Duke??  ;D

At our WI market, the egg lady there often has blue eggs, smaller than a regular hens egg but for the life of me I can't remember what breed she said they came from.  She also sometimes has white eggs.

Delia in her how 'How to Cook' TV series only had white eggs.

I must say I have never seen white eggs on sale.  The only ones round here are a varied shade of brown.

Araucana hens lay blue or green eggs.

Asbean ~ I agree I think white and brown eggs should be able to live in perfect harmony together.

My Black Rocks lay brown eggs and my White Leghorns lay..... yip you guessed it... white eggs 8) 8)

We have a bird called a star that lays white. Had to laugh the other week my son was telling his curious mate that they were rabbits eggs. His mate believed him and went and told his mother. Mother told him "don't be so bl**dy stupid Jordan" my lad was creased up in the corner.

It was found that the Brits like a brown egg and the Yanks prefer white (KKK lot probably) So producers just did what they could sell. I must say, white eggs do not seem to look right now after years of only getting brown ones.

It is down to the species of hen from what I am led to believe.

I have noticed black sheep more in fields when driving round the country lately, never used to see them.

In Asia, I noticed that they had pink eggs, the insides are all black but they taste just the same as normal eggs. A bit off putting on the plate I thought.

They also have chickens with totally black skins, when plucked. Taste the same as all other chickens, but rather quirky. I never thought to ask if they laid the pink eggs.

Clarence Court speciality eggs

These come from a Cornish farm which breeds free range Old Cotswold Legbar and Burford Brown hens. Cotswold Legbar eggs have pastel-coloured shells, in shades of blue, pink and peach, large yolks and a rich flavour that makes them especially good for baking. Cotswold - Burford - in Cornwall?? At least Tesco in Stow have them!

What I miss most are Duck eggs. And the occasional Goosey one as a treat.

   Did you know - years ago, they used to dye white eggs brown with tea leaves

   because everyone thought that brown eggs were healthier !     honest !

I too have never seen white eggs available to buy ever since I was a child, and like asbean said, it was considered brown eggs were more healthy lol, so it was bye bye to white eggs.

Every year when we go abroad on holiday, there are always white eggs available in the hotel and I always mention the "when I was a young girl....." story to my hubby  :D

They have duck and goose eggs at Winchester Farmers Market  :) :) :) :)
