They are fab.  I have just cut mine down along with the globe artichokes.  My only complaint is this...the first year I had my cardoon, the flowers were only about 5 foot high and I loved watching the bumble bees getting drunk in the purple flower.  Now they tower to 10 and 12 foot high and even on a step ladder I am to short to see the action.  :-\

Are you kidding? 10 to 12'?

I have sown cardoons this year for my new "cool" perennial bed. If they grow THAT big, I shall have to remove my Buddleia davidii "Black Knight" :o
