Title: Chocolate Chip Cookies?
Post by: Uncle Joshua on January 25, 2009, 14:59:16
Has anyone got a good recipe for Chocolate chip cookies?

My wife has had me making them out of a packet but I'd sooner do it from scratch.

This is a recipe of my mum's. They are gorgeous and very easy to make.

14oz plain flour
1/2 oz baking powder
1/2 pz bicarb
9 3/4 oz sugar (I just use granulated)
1oz cocoa
3 dessert spoons golden syrrup (I have substituted this for black treacle as well)
cap vanilla extract
9 3/4oz marg (I use marg instead of butter, but I suppose butter could be used)
plain choc chips (get good 70% cocoa ones)

This makes double chocolate chip cookies about 30 big ones, but you could use the basic recipe to make many other variations.

Mix all dry ingredients, rub in fat, add liquid and mix to bind. Roll into a tube using grease proof paper and chill in the fridge. You could freeze the dough at this stage too. Then slice of rounds about 1/2in thick. They do spread so allow room on the tray. Bake at 170 degrees C for about 10-12 mins. They will spread out and look crackled on the top, but still soft. They set when cooled, but should be nice and gooey!
