Title: Lemon curd?

well, I went shopping this morning, looking for little prezzies for some of my more 'difficult'? laydees & came back bereft of prezzies OR ideas.......THEN I thort.....a jar of home-made lemon curd?

It'll be just a little gift (for my appreciation of them paying me loadsa dosh this year to pull their weeds :P) and I've got the little jars & can pretty them up......SO...

Impromptu straw-poll here, please, for the idea?......if there are more +++s than ---'s I'll get cracking termozz.

and btw.....anyone got a foolproof recipe? Been years'n'years since I made any?

Ooo Lish, I reakon it's a winner - but then I loves lemon curd on warm toast or crumpets.  MMmmmmm.

I think the recipe I make is delias.

8) Thanks for the Delia tip too....been ages and ages since I made it and her recipes are always reliable 8) Hope to buy for,  make, do and deliver tomorrow. How neat  is that?

Not made lemon curd for maybe thirty years or so, but if your handing it out for pressies don't forget me  ;)

RIGHT! Lemons bought, likewise unsalted ENGLISH butter and sugar....little cockle and antipasto jars washed out and sterilized, Delia on standby.......All Systems GO in a few minutes 8)

First made this recipe about 30 years ago, and for the last couple of years have made it from time to time for pressies etc and have just made a triple batch.  It's foolproof and easy, and delicious.

Thanks Bean 8)..I was already in the kitchen when you posted..I halved Delia's recipe & used 2-2-4-6 = 2 large lemons, 2 large eggs, 4oz unsalted butter & 6oz caster sugar....oh! and a bit of cornflour? All nicely done now & gave the 6 little jars I wanted + 2 spares + the topping for a hunk of fresh bread & butter laterz.....not a bad afternoon's 'work' then  8)

Gonna pretty them up later, pack them,  deliver them tomorrow and then that's Christmas = SORTED ;D

Asbean, my recipe's the same as yours, but I strain the liquid to remove the little bits of zest.  I find I like my lemon curd smooth and beautiful without the bits, but do like the taste they add.

Found a wonderful lemon meringue ice cream recipe - so had to make the meringues and the lemon curd!  My son doesn't eat Christmas pud so was thrilled to have something extra special.

Here it is -
Half pot of homemade or really good lemon curd [ we used at bit more after tasting]
2 oz meringues, broken up
Juice and finely grated zest of lemon
300ml double cream

Whisk cream lightly until it leaves a trail, add everything else, mixing gently. Taste - dangerous as it is tempting to eat it all there and then ;D
Line a large bowl, or several small bowls with cling film and dollop in the lemony cream, then freeze.
This should feed 6 people!!!!!

And have had positive 'feed-back'(?) for the lemon curd prezzies too 8) - think I'll add orange curd to my ever-increasing repertoire next year anorl :D

Orange curd is not so effective, probably because it's sweeter.  But lime curd is a winner too  :P :P :P :P :P
