Title: what to do with horseradish

I think I'll dig up my horseradish tongs soon, the leaves have died off so I guess it's time. Trouble is I don't know how to preserve the root without making up 100 jars of horseradish cream.

Can you grate it into hot pickling vinegar then freeze it - would that work?

PS also I don't know how to make horseradish cream!

it might not be right but we make horseradish cream with
1/2 pint ish   whipped cream
2 tbsp ish grated horseradish
salt pepper lemon juice
mix it all together

you can all use
1 pot creme fresh
1 teaspoon english mustard
grate horesradish (depends how strong you want)

One piece of advice, when you are grating the horseradish, get yourself a pair of goggles, the sort you use when going snorkeling.  Horseradish is extremely pungent, and is far worse than onions for bringing tears to your eyes. ;D ;D

oh yes, i can personally attest to valmarg, i blitzed some in a food processor and leant over and breathed in,  - stripped my lungs  out!!!!!

I hope it is strong, I dug the tongs up today, snapped the end off one and had a nibble - no flavour and no heat either  :'(

I wash it then place in freezer, defrost when wanted and do as above.Bit concerned you cant taste it, it should  also smell strong!

Yes - freeze.

If sauce, Mayo keeps better than Cream.

hi markfield rover- do you just freeze the whole thong? or freeze it when it's grated?

I cut the thong into the right size for a meal then freeze the whole  thing ,when defrosted the outer skin comes away  almost in one
then I grate, well actually I place it in one of  those little whizzy things ,no tears no mascara all over the face.Hope that helps.

I have blended it with mild pickled beetroot to make a dressing and the taste is great nice colour too.
