help, was given a sugar thermometer so decided to make fudge
1/2 pt milk
1lb 4oz g sugar
4oz butter
stired till disolved
boiled 2 mins lid on
boiled 15/20 mins till soft ball
leave 5 mins
beat till glossy
it tastes yummy but its blond and soft what did i do wrong

Am bumping this up as I am a fudge addict but have never been brave enough to make my own - tablet, coconut ice yes but fudge no! Thanks Babybird. - do I really need a sugar thermometer? Advice please!
One tip - don't get my cleaner... She slammed a drawer shut with my sugar thermometer sticking over the back & snapped it in half...but that's probably not what you did wrong...
I've only made it 3 times & both good times it had condensed milk - first was great, second (without condensed milk) turned into what we called "tablet" where I grew up (grainy stuff), third was great again...
If it's too runny, I reckon it should've got a bit hotter... Tim's good on this topic.

ollie hmm yeah it does taste like tablet not fudge, only very soft not hard
i was hoping to get a reply from tim but it seemed a bit off to address it just to him lol
i stopped it at soft ball coz thats what the book said (good houskeeping 90's i think)
had i been doing my normal make it up as i go along i would have left it longer till i got the colour.

i have tried again and the colour is a little better but i think i didnt cool it enough befor i beat it
i just left it in the pan for 5 mins as per recipe but in my Heavy pan it wont have lost that much heat
i will get this right
is jam any easier?
