I only lifted the last of mine a couple of weeks ago and they were fine apart from the slug damage.

I am still lifting mine when needed. Seem to be okay. Last year I did the same and it was only the very last ones I lifted in late Jan which had stopped tasting sweet.

Should be ok but leave in too long and it may become woody.  ;D ;D ;D

Here are few questions that seem to have been missed!
when did you plant them?
what was the dtm of this variety?
How long have they been been in the ground.
How large are they ?
What variety are they ?
What is current weather like?

Gonna get the last of mine up tomorrow before the cold weather comes towards the end of the week. The last few will keep in some sand. Can't grumble we've not been without beetroot all year

Same here. Last of it is coming out tomorrow.  Boltardy has come up trumps again this year.

Why not roast your beetroot we do. Cut them up in small bits and roast them as you would a potato  some thing different and get to use them up

I've still picking my Boltardy (mind you, it doesn't get too wet or too cold here on the East Coast).

My favourite variety is Cylindra though ... hasn't bolted at all, lovely flavour, and has the advantage of growing long not round, so is easier to peel with a veg peeler.
