I searched everywhere for a recipe that was not a pickle of chutney and came across this to use up green tomatoes. OK so it is a bit late for this year but it is easy enough to remember for next
Fried Green Tomatoes
a couple of litres of water
2 tbsp. salt
1 cup flour
vegetable oil, lard or bacon fat
4-6 medium green tomatoes, unpeeled and sliced
In a mixing bowl, mix salt and water. Soak the sliced tomatoes in the brine mixture for 30-40 minutes. Drain and drop slices a few at time into a bag in which you have placed the seasoned flour. Shake thoroughly to coat. Heat the oil in a large pan or wok and carefully place the slices into the hot oil. Brown until crisp on both sides.
oooh, I'll try that, we still have lots of green ones on the window sill ;D
Never heard of the soaking bit. Something new every day!
green tomato tarte tatin is super duper as well - easy to find a recipe I should think
Yes google comes up with loads of suggestions. Thanks for reminding me - I have both green and red hanging about and really need to do summat with them.
Win one, lose one - we have no green toms left - so no glam recipes!
