I was given some beetroot by a nice man at my allotment site today. Having not eaten beetroot since I was a child and hating it (from a jar of course) I'm determined to "discover" its true taste! What would you recommend for the first dish?

don't want to encourage Mr Helpful too much, but he does have a point. We keep meaning to try new things with beetroot, but in the end Cook-Cool-Peel-Slice-Eat does it for us every time. They're nice as a hot veg too
they're probably great done with something like a honey and orange glaze but too lazy to try it
roasted with sunday dinner is yum but my fav is chocolate fudge cake :)
..... and HFW's chocolate beetroot brownies are very yummy!
Yep, think that will be the first recipe, ceres- got it from Saturday's Guardian.
put them in the blender with horseradish to taste. Great with any meat or cheese in a sandwich.
and stirfry the beetroot tops 8)

Here`s our favourite, coutesy of Ainsley, Peel 4 or 5 beetroots, ( a bit messy I know) cut into wedges, place in a dish. grind 1 teaspoon of cumin seeds in a pestle & mortar, Toss the beetroot wedges in 2 or 3 tbs of balsamic vinegar, throw in the cumin, then add 2 or 3 tbs of olive oil. Mix together & roast for about 1 hour at 160 C, they may need a bit longer if they are old beets.
These are even great cold, so do more than you need & finish them off the next day ;D

Did Hugh Fearnley Whittywhatsits Beetroot & Apple crumble, was great, even the kids liked it!
Usually roast them with garlic, olive oil, thyme and sometimes a splish of balsamic. Think it was Jamie recipe.
Also good raw, grated in a salad.
red cabbage with beetroot and apple is yum as an accompiant
look on google for beetroot chutney recipe ,, its easy to make, keeps well and is very tasty. :)

It might seem a bit implausible, but Beetroot and feta cheese salad is very good.
There are lost of variations just google it.
Those horrible pickled ones put me off too, but it's a great food.
It's great roasted and eaten hot with feta or goats cheese.
Or there are some great soups you can make with it - for example, blended with shallots, carrots and garlic and served with yoghurt or sour cream and chopped tarragon.
Also good raw!
Try this beetroot hater's soup from Riverford.
serves 4
2tbsp olive oil
1 onion, chopped
1 potato peeled and diced
2.5cm piece of fresh ginger, grated
zest of 1 orange
juice of 2 oranges
3 medium beetroots, cooked and diced [I like them roasted, just wrap in foil and place in moderate oven for 45mins, peel when cooled]
1.2 litres water/stock
seasoning
cream or yoghurt to serve
Heat the oil in a large pan, add the onion and fry until soft but not coloured. Add the potato and ginger and fry for 3 mins. Add the orange zest and juice, plus the beetroot and water, then bring to the boil and simmer for 20mins until the potato is tender. Blend until smooth, reheat gentle and season to taste. serve with a swirl of cream or yoghurt :)

I like to cook it first then chop up with a granny smith apple and serve with salad dish and meat. Have also tried it roasted and it is very nice like that as well.
