Ok you good cooks.. I need your help here.
Due to the upcoming move I am trying to use up all sorts of stuff in the house and this has me stumped,
I have a commercial size bag of icing sugar,a full sack.. I need to turn into something that I can give to the school bazaar. I also have 20 or so tins of condensed milk and a commercial size bag of chocolate chips.
Any ideas?

what about coconut ice, using icing sugar, desicated coconut food colouring and condensed milk, would that be suitable for the school fete?

Hang on i have a nestle recipe book.

Microwave Coconut Ice
4 (kiwi) Cups Icing sugar
100g butter
2 tablespoons Sweetened condensed milk (sorry that's not much of that!)
3 Tbspns water
1 1/2 Cups Coconut
1 tsp vanilla
drops of food colouring to make pink optional
18cm square tin Greased.
Icing sugar in microwave proof bowl. Cut butter into 6/8 pieces and add. Mix cond. milk and water tog. Pour over sugar and butter. microwave on full power for 3/4 mins (I'd be careful here this book dates back to 1982!) or until bubbly. remove from oven and add cocnut and vanilla and beat well with wooden spoon. spread 1/2 in prepered tin and mix in colour to other half etc. Smooth top and chill in fridge for an hour cut into 2cm pices.

how about meringues ?? i make them in the microwave.
Mix icing sugar with egg white till its easy to roll into balls the size of your thumb nail, space well apart on baking parchment and cook for 1 min max! nice and crispy BUT if you leave them to long they burn in seconds.
Another thought ! How about peppermint creams, ready to give as prescents ;D

Peppermint creams sound good and I do have the peppermint..do you have a recipe please?
The sack of sugar originally was to do a Gingerbread house project with a large group of kids but I am unable to do it now.
Does anyone know if I could use it in baking instaed of other sugar, I know it comtains 5% cornflour but would that matter?

sugar mice recipe, plus you can use it for snowmen, just a different shape ;D
1 Egg White
450g (1lb) Icing Sugar
Food Colouring
Beat the egg white until frothy but not stiff.
Sieve the icing, adding enough to produce a fairly stiff mixture.
Add a few drops of the food colouring (flavourings can also be added at this stage if required).
Knead the mixture in to a firm paste and divide into 12 - 16 pieces.
Roll into oval shapes with making one end pointed to form a nose, pinch up two small pieces to produce ears.
Eyes can be formed using silver balls or currants, the tail can be made from string.
Place the mice onto parchment or silicon paper, place in a warm place to dry for 24 hours.
Store in an airtight container
we used liquorice strings for the tails, you could use the choc drops for eyes or buttons on the snowmen :)

2oz melted marg
1 small tin nestles milk
2tbsp drinking choc
2 tbsps coconut
10 crushed digestives
choc strands
mix all roll in the strands ( vermicelli ) you will just have to judge the milk, dont think you get small tins now, probably half a big tin will do
coconut balls
8oz coconut
4oz icing sugar
7fl oz condensed milk
mix all, roll in balls and chill overnight in fridge, then coat in melted chocolate and chill to set, add more milk if the mix is too stiff

in answer to your question hubby (chef ) says he doesnt think you can use icing sugar instead of caster sugar but he says he has never tried it
the coconut ice i made was cold no cooking mix icing sugar coconut and condensed milk together colour half then shape into a block and leave to set cut when set into cubes

make them quite thick or they break (lots of schools dont like
propper ones because of the raw egg)
