Title: Does anyone have tangy marmalade....

Wondering if there are any sort of 'tangy' marmalade recipes that can be made with say....apples, pears etc. which I've loads of on lottie (adding other fruits or juices if necessary for the sharper 'tang').....

I just luuuvvvv marmalade but don't eat so much jam - (nothing better than tea & slices of toast & marmalade when I can't sleep)  :P -

Is such a thing possible please? - Maggie

I goooooogled and this is what I got.

Orange apple marmalade recipe
This orange apple marmalade is delicious and is easy to make.
Ingredients:


lb oranges, washed thoroughly
lb cooking apples, washed thoroughly
1 teaspoon lightly crushed coriander seeds
1 cup water
1 cup sugar


Equipment:
Clean jars
A large pot (about 5 quart size)
Cheese cloth
Twine
Cookie sheet


1. Cut the oranges into segments and slice the segments into very small triangular slices. Remove seeds and set aside (do not discard). The white fiber in the middle of the orange should be cut away.


2. Peel and core the apples and cut the apples up into small chunks.


3. Lay the cheese cloth on a flat surface and in the middle of the cloth, place the orange seeds, coriander seeds, apple peel. Gather the four corners of the cheese cloth together and tie to make a bag. Place this bag into a large pot.


4. Put into the same pot, the cut oranges and apples and pour in the water.


5. Bring the pot to a slow boil and simmer for one hour.


6. Mean while, spread the sugar on to a cookie sheet and [place into a 250 degree Fahrenheit oven for 15 minutes.


7. Stir the warm sugar into the simmering pot and stir till the sugar is dissolved. Take out the cheese cloth bag from pot.


8. Turn up the heat to bring the contents of the pot to a boil. Keep stirring until the mixture sets, the temperature should 250 degrees Fahrenheit on a candy thermometer. You now have orange and apple marmalade. Store in sterilized jar(s)

found another......actually, I think there are lots.

Apple Marmalade Recipe 2

Pare, quarter and core the apples and put over the fire with just enough water to keep the fruit from burning; cover closely and let cook until soft; press through a colander. Measure the pulp and allow three-fourths a cup of sugar to each cup of pulp. Stir and cook until when tested on a cold saucer the mixture does not separate. Often a lemon or an orange is used to each one or two pounds of apple. Slice as for orange marmalade, discarding the seeds; let cook in water to cover until the peel is tender, then add to the apple pulp.



Pear Marmalade (Marmellata di Pere):
2 pounds pears, peeled, cored, and cut into small pieces
1 1/3 cups granulated sugar

Mix fruit and sugar together thoroughly, cover with a kitchen towel, and set aside for at least 3 hours to let the juices start to run. Transfer to a large non-reactive saucepan and cook over moderate to medium-low heat until pears are heated through, about 10 minutes stirring with a wooden spoon to prevent sticking. Remove from heat when mixture is dense.

Emma - these sound great, especially the first and last which look so easy  :)...had to laugh at this bit in the 2nd recipe....

do you think I should go camping if I decide to do this one  ;) - thanks Maggie

now why didn't I think of goooogling!!  :-[

Today I made the Orange apple marmalade recipe.....very easy to make and really nice.

Have already tried it - well it's only right that I test it out isn't it? - nice thick consistency, with lovely pieces of peel - definite slightly bitter 'twang' but you can taste the apples - just! beautiful colour too.

I'm a bit late to the topic, but I just saw a page on how to make orange marmalade that in addition to the recipes, it is fully illustrated, with photos of each step, costs and quantities of ingredients, equipment needed, etc.) on http://www.pickyourown.org/marmalade.php - The website (www.pickyourown.org (http://www.pickyourown.org)) also has listings of pick-your-own farms, and if you live in Florida, you could even go pick some fresh oranges to use!
