Title: Sweet pepper preserving

Has I have a fair few red peppers at the moment:

I am thinking about preserving them in olive oil. Has anyone done this or know the best way to go about it?

They look great - but look back on the dangers of preserving in oil - the acidity has to be just right, or they have to be refridgerated.

Better still - roast or flame, skin & freeze.

Or you could de-seed a few & freeze whole for stuffing in the winter. = Tim

Be v. careful. I roasted some, put them in a jar with olive oil, and next thing I know they had erupted. D'oh. Oh well, pound a scoop, wasn't an immense loss. And they smelt so good cooking  :'(

Could you just freeze them as they are???? ???
