Title: PICKLED ONIONS .ADVICE PLEASE.

I have grown some shallots,pulled them yesterday as I was frightened of them going mouldy in all this rain.

I only put a few in so I only have enough for one large jar.

Some of them were a little bit green when I peeled them,is that ok?

Soaked overnight in salt water,put them into sarsons pickling vinegar.

As the jar is large the onions did not reach the top of the jar so I just covered the onions.Should I put the vinegar to the top of the jar.?

i would fill the jar personnally, otherwise you may get yellow spots on the exposed bit, and its a bit nasty. :)

Well, you may be lucky betula.

When you have pulled your shallots, you need to let them dry out for several weeks, either in the greenhouse or shed.

The wet brining ratio is 1lb onions (shallots) : 2oz salt : 1 pint water.  These should be left overnight, drained and rinsed.  They should be packed into jars, covered with malt vinegar, and left for several months (+/- 3), until they are ready to eat.

Oh no,I got the rest of it right but pickled them the same day of lifting.I thought it seemed easy.

Oh well,better luck next time.
