BOSTON BAKED BEANS

12 oz. haricot beans
1 large onion
1 tablespoon oil
1 teaspoon dry mustard
2 teaspoons black treacle
¼ pint tomato juice (or the liquid from a can of tomatoes)
2 tablespoons tomato puree
2 teaspoons brown sugar
½ pint unsalted stock
Soak, drain and rinse the beans, then cook them in fresh water
until they are almost tender, and drain them again.
Set the oven to 275 F (140 C), mark 1. Peel and slice the onion.
Heat the oil in a flameproof casserole and fry the onion for about
5 minutes, then add the rest of the ingredients and bring the
mixture up to the boil. Cover the casserole and put it into the
oven; cook for about 4 hours, stirring occasionally.
NOTES
I've also done this with cannellini beans and those I've saved from my own runners
I usually add some bacon bits
I'm nearly sure I used more black treacle than it says
If you're after fast food, two hours in the oven will do at a pinch
Goes well with sausage and mash
I put a smoked ham hock in there too and use molasses instead of treacle.
sounds great !! like the idea of putting a ham hock in it, makes a whole meal !!
Do you want the recipe for the Boston Brown Bread that always goes with the beans. I also put my onion ion whole and uncooked and cook the beans overnight in the crockpot.XX Jeannine
Yes please Jeannine. By the way, that was the original recipe. I doubt I've ever followed it to the letter but I like the idea of a hock in there, thanks ;D
