Post by: lidd63 on September 07, 2008, 14:31:36
Help!  I've just been browsing for recipes to use up my corgette glut and came across Tim's courgette bread.  Looks great BUT the link attached to the original posting has expired.  Can we have a repeat please?

Thankee!

I made it this week and I have to say I'm not hugely impressed.  It needs something else, herbs maybe.

But you have to admit that it's pretty, Ceres?

And it's actually Roz Denny's - I'm not possessive!

It's certainly pretty, no doubt about that.  I'm going to use that shape on other bread recipes I like more.

Try grating the courgettes and adding flour and an egg. Leave for the water from the courgettes to absorb the flour, add more flour if need, be the mix should be thick.

Then deep fry a table spoon full at a time but  don't let them colour. Drain them.

Freeze them when cool

Defrost then reheat in the oven for 10 mins 180 degrees and they should crisp up and are great with a dip
