Title: yet more bean questions
Post by: flowergirl on September 05, 2008, 19:43:52
I have far too many runner beans and was wondering can I eat the actual bean when it reaches maturity? I will save some for planting next year but wondered if I could throw them in a chilli? Is there any special preparation I should do? Any advice much appreciated.

Yes, I do it all the time, you can also freeze them.

Just let them dry as you would for seeds, then when cooking , soak them overnight and cook as usual. If freezing you don't need to soak. The colour will change if dried. XX Jeannine
