Title: Tamotor Chutney

One of my favorites, lovely with Puppadoms, and great in a brie & ham baguette! ;D

Made some last night and got rid of 7lbs of mixed tomatoes! :)

Makes 1 1/2 lbs

4 Tablespoons vegetable Oil
1 tsp onion Seeds (Kalongi)
1 tsp Fennel seeds
1 tsp cumin seeds
1 tsp Black Mustard Seeds
1-2 small dried chillis
1 2/3 cups brown sugar
1 1/4 cups White Vinegar
2 1/4 lbs Ripe tomatoes
1 1/2 tsp salt, or to taste


Heat oil, add spices & Chillies, saute for 1-2 minutes, or until they crackle.
Add sugar & Vinegar & slowly bring to a simmer to dissolve teh sugar.
Add tomatoes & salt - cook on low heat for approx 1 hour (usually longer!) stirring frequently until tomatoes break down into a thick chutney.
Check seasoning.
Spoon into sterilised jars.
Store in a cool place foor up to 2 months.
Once opened, store in fridge & eat within 2 weeks. (I have just used up mine from last year with no ill effects)
