how do you know when it's ready?

The first indication is when the tassles turn brown- second is to peel back the green husk and push your finger nail into a kernel. If the liquid that exudes is creamy eg single cream its ready. If the liquid is waterey (clear) then its not ready.

The problem is that all the cobs ripen at about the same time so you need to eat as much as you can and freeze the rest preferably minutes after picking. If you just put them in the fridge, they soon lose their sweetness.
They are great cooked on a George Foreman as they don,t burn.
Careful with the first bite, they are very hot!

My plants have 3 cobs per plant and are small, one plant has even divided to give two flower heads and 5 cobs!! Should I remove cobs to give the remainder a chance to get bigger? At the moment some tassles are dork brown but the corn is transparent and therefore not ready.
mine are transparent with brown tassles too so I am leaving mine for a while longer

Just a point, be careful of the transparent cobs.. some of the Supersweet varieties have kernels that are much paler and less opaque than the others,, they are not transparent of course but not a dense buttery yellow. XX Jeannine
When you freeze them do you do them whole or take the nibs off. Also do you parboil them first please? I can see a glut coming up even though I have tried to do them in stages......

I freeze them whole WITH their jackets on, I find they keep very well this way.XX Jeannine
