Remove cucumbers when they get to the size you want - do not let them get to big or start going yellow.  Leave marrows on as long as possible - I shall leave mine on until the first frost is forecast.  They may well stop growing but any time spent on the plant will only improve them and the longer they have to ripen, the better their keeping qualities.  So, in summary - treat cucs like courgettes and marrows like winter squash.

Pick the cucumbers as and when they are ready.  If you leave them on too long,  the plant will stop producing.  Usually - the more you pick - the more the plant produces.

My Marketmore are being picked at about 8" long,  but my Carmen is being picked at about 12" long.  Depends upon the variety.
