Courgette And Brie Soup Recipe
Ingredients
· 1 lb Courgettes sliced
· 6 oz Brie
· 2 pt Chicken Stock
· 1/4 pt Cream
· 1 Onion chopped
Method
1. Add the onion and courgettes to a saucepan and saute in olive oil for a few minutes.
2. Pour in the chicken stock and stir.
3. Let it simmer for 30 minutes.
4. Pour into a food processor, add the Brie cheese and liquidize.
5. Stir in the cream before serving.

Similar to a recipe we have, but would swap brie for a blue cheese, ie dolcelatte, stilton, etc.

Can you freeze this soup - or would you not add the cream?

Jitterbug this soup freezes well but add the cream just before serving. So defrost ~~reheat~~add cream.

Another recipe for courgettes. Fry courgettes and onion (obviously from the allotment) in butter, can add black pepper. Put in a saucepan when golden colour. Then add one tin of tomatoes (as my tomatoes aren't ready yet) and tin of drained sweet corn and about a pint of vegetable stock (Knorr stock cubes are good). Cook slowly for about 30 mins and then liquidise or I have a electric blender. Then eat and enjoy.
I have eaten some and frozen rest. Also just courgettes, onion and veg stock make a good soup. Just given some to neighbours and some to new comers on the allotment, also runner beans. I planted 12 plants of courgettes, do it every year. One neighbour is vegetarian so she was pleased and is making ratitwoi sauce (sorry about the spelling). Perhaps I will look that recipe up.
Really hot sun here today in Enfield, perhaps the tomatoes will start to ripen. Got reduced slug pellets and Growmore in Morrisons today. Hope it is OK to use Growmore??? Also picked some blackberries today from the unused allotments on our site, although a lot of sites are now cultivated which means blackberries are harder to find.
Nice one borlotti :) another good idea for courgettes! I made a chocolate courgette cake today.. first time ive made it ...i got the recipe from a thread on this www site. Ok so the cake is cooling off at the moment but I will let you know what my husband thinks ..he loves cake and is a good judge!

I am not sure I fancy courgette cake but hope it is delicious. We are having potatoes, onions, courgettes of course and runner beans (from the allotment) steak and mushrooms which I had to buy.
Having a competition at the allotment on Sunday so must not pick anymore beans or courgettes so I have five courgettes and seven runner beans to enter. It is only a bit of fun and I don't expect to win as my runner beans may be small and some are bent but they still taste good. Don't mind runner beans as they freeze well. I am learning different recipes and apparently courgettes are good fried in batter. My fridge is filled with blackcurrant jelly, and different jams and we don't eat jam. Still it is great fun experimenting and the excitement of growing something. Had New Zealand spinach last night, given to me by a fellow allotment grower. It was OK but not something I would grow myself.

i added garlic and pepper and no cream (dairy intolerance)
the cheese was enough for us

:D twinkletoes!! My husband hated the courgette chocolate cake :'( and to be honest I didn't rate it too highly either!....but I have been using spreadable butter in cakes recently and getting a very poor result ! My husband said it had a very earthy taste!! I did wash the courgettes honest I did!! I found it to be stodgey!!

Excellent! I made it with cornish brie (special offer), complete with rind and I didn't bother with the cream because when tasting didn't think it needed it. Absolutely gorgeous! In fact am just about to make it again. Many thanks. Also tried a courgette and roasted garlic soup but didn't like it half as much.
