I pick my courgettes small , max 20 cm, and have loads.
Yesterday evening I made this very easy and fast (ready in 20 min) recipe
for 4 people:
3 courgettes in slices (or cubes)
olive oil
1 sliced onion
1 teasp. chili powder,
(0,5 teasp.ground turmeric),
3 cloves chopped garlic, salt
coriander or ground coriander seed
4 whole peppercorns
4 chopped tomatoes
2 tabl.sp. yogurt
Haet oil and saute onion
Add the rest and stir, simmer for 10 min.
Serve with boiled rice :P

PS Reminds me of a recipe I've been trying to re-locate for ages. Long slices with ?? garlic, herbs etc?? - baked. Thought it was Nigella, but no. Ideas, please? = Tim
Thank you for the recipe, it was delicious!! Have you ever tried freezing it? Maybe minus the yoghurt? One to keep I think ;D
I freeze it, inclisive the yoghurt, no problem. But the reason I don't do it anymore is that the courgette is dissapearing by freezing. :-[ :-[
