Title: Globe artichokes.

Help!!!! I have loads!!!

Any suggestions, as I am on a diet so cant munch them dipped in butter :(

I want to know how to do ANYTHING with them, I have never cooked them so if anyone can tell me (in idiot speak) I would be very grateful!!  ;D

Debug by placing in a bowl of slighty salted cold water weighed down with a plate for an hour or two.

Steam or boil small ones for about 25 mins, large ones for 40 mins.

Remove the "choke" from the large ones.

Hope that helps - some peeps microwave but not been that brave here  ;D

you can use teh hearts in salads etc or on pizzas they are extremely tasty. Would a vinaigrette not be less fatty than butter? i don't know if a spoonful or two would really ruin your diet...

Also you can split them in half, take out the choke and stuff them, for example with a spicy mushroom mix.

Yes I opted for vinaigrette with a bit of garlic. They were very good!

Aioli is really just garlic mayonnaise.

Mash up your garlic with salt. Whip together egg yolk,mustard and lemon juice. Gradually add olive oil until emulsified.

I wouldn't imagine it has massively more calories per portion than vinaigrette and probably fewer than butter??

I have to say I cannot get on with them at all! I only like the hearts but find them so fiddly and time consuming to prepare, think I've decided to yank the lot out ! stupid thing is I grew some more from seed this year :-[

They're worth leaving just for their architectural foliage and their gorgeous flowers even if you don't want to eat them!!

The italians at my site are harvesting their second crop this year having cut them right back after the first harvest, they said they harvest using this method up until the first frosts.

I ate mine on pizza. Yum. next year i will harvest them younger...carefully watching what the Italians do....I may get more this year yet having followed their lead.

By the way i used to think this guy was in his 60's until he told me his son is 58!

Kea the Italians have got it right - cut mine down after the first crop (thinking the leaves were shading the other crops) hey presto! another lot in bud from what I thought were the suckers for next season.

Well they'd know this guy's probably been growing them for at least 60 years!
